Spicy bean and rice burritos

Heather made these for lunch today and they were so good. Just like the burritos in my favourite place to get them in Dublin. These amounts make 8 burritos.


Ingredients:
Tortilla wraps
1 tbps olive oil
1 tbps Cayenne pepper
1 tbps cumin
1 tbps chili powder
3 garlic cloves
4 chili peppers
2 cans mixed beans (black, pinto etc.)
1 jar of salsa
2 cups of rice
(And the following to add to the burrito before serving, any amounts you like:)
Sour cream
Black olives
Grated cheese
Lettuce
JalapeƱo peppers


Preparation:

1) Heat a frying pan with the olive oil in it.

2) Finely chop the cloves of garlic and add to the pan. Chop the peppers and add them too. Remove the seeds if you prefer it not too spicy.

3) Add the chili powder, cumin, cayenne pepper and 2 tbps of the salsa and stir well. Cook until it starts smelling really good.

4) Cook the rice separately.

5) Add the beans and 1/3 cup of water and simmer for 8 minutes, mashing some of the beans slightly while it's cooking to thicken the consistency.

6) Add the rice and another few tablespoons of the salsa to the mixture in the pan and stir again.

7) Divide the mixture evenly into the tortillas.

8) Before closing them up, add any amount of the sour cream, olives, grated cheese, chopped lettuce and jalapeƱos as desired.

9) Roll them up in burrito shapes and they're ready to serve.
